Roasted Beet and Arugula Salad

3 cups arugula (washed)

1 beet

1 apple

1/4 cup walnuts

1/2 cup feta

3 tbsp fresh Dill

1 tbsp avocado oil (sub for other oils)

1/4 Balsamic dressing

Method

1) Turn on oven to 350 degrees. While oven is heating, peel and chop beets into small cubes, toss in oil and roast in the oven for 25-30 minutes.

2) While beets are roasting, chop up all of the other ingredients and add to a salad bowl.

3) Remove beets from oven, add to salad bowl and toss together with a balsamic dressing.
