Purple cauliflower Tabouleh
1 head of purple cauliflower (any kind works)
1/4 cup white onion
1/4 cup hemp seeds (I use Manitoba Harvest Hemp Hearts)
1 tsp salt
1 tsp pepper
2 tbsp olive oil
1 tbsp lemon juice
1 cup of chopped parsley
Cut cauliflower into small forests, and blend in a food processor until you make some cauliflower rice.
Chop up the the onion, and parsley, mix into a bowl with the chopped cauliflower, and add in the hemp seeds.
In a separate bowl, add the wet ingredients to create the vinaigrette.
Mix in the wet ingredients with the cauliflower mixture. Store in the fridge, and serve on hummus or as a side dish.
