Cashew Cheese Broccoli Penne

3 cups water

2 cups brown rice penne

1 1/2 cups chopped broccoli

1/2 chopped green onions

2 tbsp black sesame seeds

1 tbsp chilli flakes

Cashew cheese sauce

1/3 cup cashews (soak in hot water for 15-20 min)

4 tbsp nutritional yeast

1/4 cup unsweetened almond milk

1 tsp garlic powder

1 tsp turmeric powder

salt and pepper to taste

METHOD

In a sauce pan, bring water to a boil. add in penne and boil until cooked.

On the side, chop the broccoli and green onions and steam the broccoli in a separate sauce pan.

Add cashew cheese ingredients into a blender and mix until smooth and creamy.

Drain the noodles and combine into a pan with broccoli, green onions, sesame seeds, chilli flakes, and cashew cheese sauce. Cook for about 5 minutes on medium.

Serve in a pasta bowl and enjoy!
