Butternut Squash Soup


Butternut Squash Soup

1 cubed butternut squash (about 3-4 cups)

1 chopped onion

2 celery stalks

3 carrots

1 cup cauliflower florets

1 tsp minced garlic

1/2 cup coconut milk

4 cups chicken broth

1 scoop @vitalproteins collagen (not necessary)

2 tbsp olive oil

2 tsp @simplyorganicfoods turmeric

1 tsp nutmeg.

Fresh thyme

Salt and pepper


Heat oil in a large pot.

Add in chopped onions, carrots, cauliflower, celery, and cubbed squash until steamed.

Once veggies are soft add spices and mix well.

Add in all liquid ingredients, including the collagen powder and bring to a boil (about 30-40 min).

Use a blender to purée soup
