Greek Chickpea Salad

1 can chickpeas (rinse)

1/2 cup red onion

2 cups cucumber

2 cup cherry tomatoes

2 cup black olives

2 cups mixed greens

1/2 cup feta

1/4 cup fresh parsley

METHOD

Make Greek dressing below and keep in the fridge while preparing salad.

Rinse chickpeas and toss in chopped tomatoes, chopped cucumber, diced onions and olives into a salad bowl.

Add in parsley, feta, and the Greek dressing and mix together until well combined.

Serve as a side dish or add another protein source of choice.

Greek dressing recipe
1/2 cup apple cider vinegar
1/4 cup olive oil
1-2 drops of oregano oil
1/4 tsp garlic powder
1/4 tsp Greek seasoning
1/4 tsp marjoram
Salt and pepper to taste
Mix together and store in the fridge.
